Tasting Notes
Vinous 95
The 1996 Brut Blancs de Blancs Louis Salmon is now fully mature. Candied apricot, hazelnut, honey, dried herbs and coffee are all signatures of a wine that is peaking. In a good cellar, the 1996 will hold for another five to ten years, but it will not improve materially, if at all. This is a fine effort from an era in the house’s history when the wines were decidedly more rustic than they are today. The 40% Le Mesnil, 20% Chouilly, 20% Cramant and 20% Avize, done in enamel tanks that have since been replaced, with full malolactic fenrmentation to soften some of the very high acids of the year. Dosage is 8 grams per liter.
Anticipated maturity: 2026-2030
